This year, the center is working to convince the state's school districts to ditch pre-made, prepackaged school lunches. Further, the more California-grown produce that can be purchased and used in cafeterias, the better, Executive Director Zenobia Barlow said.
"More fresh food and more California-grown food in cafeterias will help children eat and learn and help the economy too," Barlow said.The Center for Ecoliteracy believes it has a starting point, which includes a cookbook with recipes that can be prepared for hundreds of hungry children.
